Free camping in Greece is illegal.

This means that you run the risk of getting a fine from the police, who might even come from a costal patrol boat from the sea.
If you still want to camp, Anafi, Donousa, Tilos are good spots with basic water and food supplies nearby.
If you want to be nearer to Athens, you can go to Agkistri island or to Xiliadou beach in Evoia. It is Police-free, close to civilization, but crowded in August.
If you go to Kithira, you need a car to move around as there are no public transportation. There are a few beaches you can camp, Palaiopoli, Limnionas and a small one near Kapsali (I think, will have to ask my parents to confirm).
Gavdos in Crete has lots of free camping and is gorgeous, and warm weather even in october. People camp there all year round, and there is a free shower artefact there. http://www.interkriti.org/camping.html
